Overview
Biochemically it is a reducing agent and a cofactor. It donates electrons to a family of iron- and copper-dependent enzymes, keeping their metal centres in the reduced state — prolyl and lysyl hydroxylases in collagen maturation, dopamine beta-hydroxylase in catecholamine synthesis, and the 2-oxoglutarate-dependent dioxygenases that include the TET enzymes and the HIF prolyl hydroxylases. That last group is why ascorbate turns up so often in epigenetics and hypoxia-signalling papers.
